Learn to make fresh pasta and risotto, using traditional Italian ingredients and techniques to create perfect sauces and dressings.
Over the sessions, you will learn to how to make:

鈥 Fresh egg and water-based pasta from scratch. 鈥 Use a pasta machine or a rolling pin.鈥 Shape tagliatelle, orecchiette. 鈥 Fill Ravioli and Tortelli.

You will also discover the secrets of some of the most traditional sauces like Amatriciana, Carbonara, Basil Pesto, Sicilian Norma and will master the art of Risotto making using local seasonal ingredients.

Please bring the following with you each week: 路 A small mixing bowl路 A tea towel Oven gloves路 A chopping board 路 A knife and a fork路 Cling film路 A scale路 A large tray lined with a tea towel 路 A dough scraper路 A pasta machine if you own one, alternatively please bring a rolling pin. (First session only)

For the first session you will also need to bring the following:鈥 1 large eggs鈥 100g pasta flour (Tutor will bring the flour for all)

The cost of ingredients you need to bring should total no more than 拢10 per session.

As part of your course we may organise trips to assist you with your learning. Trips are optional, and you will not be penalised if you choose not to participate.

Learning & method assessment
There will be on going informal assessment via question and answers, observation and tasting with feedback given on how to improve if relevant.To track your progress and achievement you will be required to complete a short document.
